cube 4 large potatoes-
heat ghee in a pot-add crushed garlic n ground green chillies-braize for few seconds then add d potatoes n s+p,little arad (turmeric) n a dash of lemon juice... Cook til soft- add a lil milk n mash coarsly...
Cool n add fresh duniya (coriander)- cut up fine...
Dough:
2 c flour.. 2 t yeast.. 2 T sugar..
2 T butter.. 1 t salt.. ½ c warm milk.
½ c warm water (mix water+milk)
Mix together the dry ings.. Rub in d butter n form dough wid milk/water mixture- allow to rise- divide into 4 balls n roll out 4 rotis(not too thick). Layer mash on 2 rotis n cover wid d other 2... Prick wid a fork all 0ver ... Brush tops wid slightly melted butter...sprinkle garlic flakes n parsley.bake @ 180 til golden brown.. Cut into triangles.. Choc-nut biscotti by Shanaaz (Saffias recipe)
Description: Shanaaz Ahmod: Choc-nut biscotti
Cream 2gether-
125g marg/butter
200ml sugar
Add in n beat well-
2 XL eggs
1/2t v.essence
Stir in-
500ml cake flour
8ml (1&1/2tsp) b.pwd
1tsp salt
Lastly mix in-
250ml chopped pecans
150g chopped chocolate
-wrap in clingfilm n chill 4 15mins. Then divide mixt in 2, roll like a log n place on a greased tray
-bake in pre-heated oven 180deg, 30mins.
-let cool, cut diagonally in slices.
-bake agen on 120deg till crisp. (Saffia)

Finger licken chicken by Fathima Motala
Description: Fathima Motala: Finger lickin chicken
500g fillet
1tsp bbq spice
1tsp paprika
1tsp aromat
1tsp lemon pepper
3/4tsp salt
1/2 tsp chilli garlic paste
2tbl lite mayo
2tbl lemon juice
2 egg whites
Crumbs
4tbl olive oil.
Cut fillet into 6cm*2cm strips.
Combine spices with mayo and lemon.
Marinate chikn overnite.
Drain excess marinade, dip in egg then coat in crumbs.
Set in single layer on oven tray.
Chill 20 min.
Drizzl oil. Bake at 180 for 30 min till golden.
(I used whole egg, not just white. And normal mayo and oil), for the sauce mix mayo with wellingtons sweet chillie sauce.

Chicken pieces (boney/fillet)
3 tomatoes grated
2 small onions chopped
Curry leaves
1/2 tsp jeera
Salt
Black pepper
Chillie powder
Dhana jeero
Tumeric
Garlic
Lemon juice
Crushed green chillies
*braise onions with jeera and curry leaves. Then add tomatoes and puree with all the rest of ing and braise for a minute. Add chicken and cook on low.
Vegetables:
2 carrots sliced
Gadra beans (boil beforehand)
Baby brinjols (aubergines)
Peppers cut up
Peas
Corn
Baby potatoes (fried beforehand)
*u can add any other veggie/beans u desire

Chocolate Mousse Cake - by Mahiera

( Makes 1 small cake)
Ingredients:
3 eggs.
1 cup (250ml ) sugar.
1/4 cup oil.
1/4 cup cocoa pwdr.
1 tsp vanilla essence.
1/2 cup boiling water.
1 cup cake flour.
2 tsp baking pwdr.
Method :
1. Cream eggs & sugar till lite & fluffy.
2. Add oil & van essen & continue beatin.
3. Mix cocoa pwdr in boiling water & add to mixture.
4. Lastly, sift in the dry ingrd & beat for about 1 min. Bake on 180 deg for +- 25 - 30 MINS.
PS. Double recipe if u want a bigger cake. Filling :
250 ml fresh cream.
2 Tblsp cocoa powder.
Sugar to taste (+- 2 tblsp).
Whip all the inged together & sandwich cake.
Ganache:
100g dairy milk choc.
2 Tblsp butter.
4 Tblsp milk.
Microwave for 1 min. Mix. Pour over cake

2 eggs separated
1 cup flour
1 teaspoon baking powder
1 teaspoon vanilla essence
¾ cup castor sugar

FOR BUTTER CREAM
¼ lb stork baking margarine
½ cup icing sugar
4 tablespoon milk
½ teaspoon vanilla
4 tablespoon boiling water
Coconut for coating
Method
Beat egg white and sugar until stiff. Add in egg yellows & rest of ingredients and bake in a square pan.
Bake @ 180 for 20-25 minutes.
BUTTER CREAM
Beat butter and sugar, add milk, vanilla and boiling water. Beat well. Cut cake into squares apply cream right around, roll in coconut.

Ingredients:
» For The Jelly Layers:
- 6 Boxes Jelly, 1 Each: Red, Orange, Yellow, Green, Blue & Purple (or Colours Of Your Choice)
- 6 Cups Boiling Water
- 3 Cups Cold Water
» For The White Layers:
- 4 Cups Milk
- 1 Cup Boiling Water
- 4- 5 Teaspoons Halaal Gelatin
- 24 Ounces Vanilla Yogurt
- 1 Cup Granulated Sugar
- 4 Teaspoons Vanilla Essence
Directions:
1. Get 6 Small Bowls Out To Start. Mix 1 Box Of Jelly with 1 Cup Boiling Water And ½ Cup Cold Water. Do This with All Of The Colours At The Same Time.
2. Heat The Milk In A Saucepan Over Low Heat Just Until It Reaches A Lukewarm Temperature. Meanwhile, In A Large Bowl, Mix Together 1 Cup Boiling Water with The Gelatin. Whisk Together Until The Gelatin Is Completely Dissolved. Add The Warm Milk, Yogurt, Sugar And Vanilla Essence And Whisk Until Thoroughly Combined And Completely Smooth with No Lumps.
3. Pour The First Colour Into A 9x13 Inch Pan And Refrigerate Until Set (About 45 Minutes, But Can Vary Depending on The Temperature Of Your Fridge And How Full It Is). Once It's Set, Very Gently Pour 1 ½ Cups Of The Yogurt Mixture On Top. Return To The Refrigerator For 45 Minutes, or Until Set. Repeat with The Colours And Yogurt Mixture Until The Last Colour Is Used (You will Have Some Yogurt Mixture Leftover). When Finished, Refrigerate For At Least Another Hour. Store In Refrigerator Until Ready To Serve; Refrigerate Leftovers.

Creamy Hake - Ayesha
1 box of hake fillets - I used medallions today. Sprinkle Robertson's fish spice on either side and place in an oven proof dish.
In a separate dish, mix together 250ml fresh cream, 1 tsp salt, garlic, 1tbls lemon juice, tbls flour, 1tbls oil, 2 tbls water and some chopped coriander.
Mix the above well and pour over the fish.
Cube some potatoes, sprinkle well with aromat and some Nomu 'One for all rub'. Place a good blob of butter on it and wrap in a foil pouch.
Heat oven to 180 degrees celcius and bake all the above for 30 minutes till done.

Millionaires Shortbread by Obaidiyah

Millionaires shortbread:
125 g (4 oz) butter or margarine, softened, plus extra for greasing
50 g (2 oz) caster sugar
175 g (6 oz) self-raising flour, sifted
175 g (6 oz) dark or milk chocolate, broken into pieces
For the filling
200 g (7 oz) condensed milk
125 g (4 oz) butter or margarine
125 g (4 oz) caster sugar
2 tablespoons golden syrup
Preparation method
Preheat the oven to 180C (350F), gas mark 4 and grease an 18 x 28 cm (7 x 11 inch) Swiss roll tin.
To make the base, cream the butter and sugar together in a mixing bowl until light and fluffy. Fold the flour into the creamed mixture until well mixed. Press the mixture evenly into the base of the prepared tin and bake in the centre of the preheated oven for about 12 minutes until golden.
Meanwhile, make the filling. Place all of the filling ingredients into a saucepan, bring to a gentle boil, then continue to simmer for 5–10 minutes, stirring continuously. You need to stir quite vigorously as little bits of caramel will stick to the pan but should come away easily and dissolve. Once the sugar has dissolved and the mixture has turned a light caramel colour, take the pan off the heat and spread the filling all over the cooked base. Leave to cool.
Melt the chocolate in a bowl set over a saucepan of simmering water, making sure the base of the bowl does not touch the water. Stir until the chocolate is completely melted and then pour over the caramel. Leave to set for 2 hours or until the chocolate is firm. Cut into 12 fingers.

* Marinade 12 Prawns With shell °̩ή The Following & Fry:
- 1/2 Teaspoon Salt.
- 1/2 Teaspoon Garlic.
- 1/2 Teaspoon Chilli Powder.
Once Fried Leave Aside.
* Chop 1 Big Onion, Fry In Ghee/ Oil.
- Add 3 Liquidised Tomatoes.
- 1 Teaspoon Salt.
- 1/2 Teaspoon Haldi. (turmeric powder)
- 1 Teaspoon Chilli Powder.
- 1 Teaspoon Crushed Chillies.
- 1 Teaspoon Red Ginger Garlic.

- 2 Teaspoons Dhania powder.

Bring above to boil. When at boiling point, add 1 small tin nestle cream & 1 tin condensed milk. Boil then pour into pyrex. Leave to set & decorate with nestle cream & flake.tastes just like burfi..

1 tsp chilli powder
1 tsp crushed red chillies
1 tsp chicken spice
½ tsp black pepper
1 ½ tblsp lemon juice
2 tblp mayonnaise

Marinate chicken strips and leave for an hour or so. Thereafter cook in butter/ghee till done. Leave aside. Then. Peel 3 large potatoes and cut into chips and fry until crisp. In an oven Pyrex, toss chips with salt, chilli powder and vinegar. Add in chicken and toss well. You may now add any sauce/ mayonnaise that you wish, or leave like that. Garnish with green pepper and onion slices. Sprinkle cheese and bake in a pre-heated oven for 10 minutes

2GO SPICY CHICKEN PASTA
Description: F̶̲̥̅̊c∕̴ƖŦƸ̵Ƹ̵M̶̲̥̅̊ c∕̴Ɩ: 2go spicy chicken pasta
3 cups penne pasta (boil)
2 Tablespoons butter
1 tsp red chili paste
1/2 tsp jeeru
1 tsp salt
1 tsp arad(tumeric)
1tsp aromat
2 breast fillet chicken (cubed)
→ melt butter on stove, remove from heat.. Add spices.. Add chicken cubes, braise till done.
Then add :
2 Tablespoons tomato paste
3 Tablespoons mustard sauce
3 Tablespoons tomato sauce
3 Tablespoons chili garlic sauce
2 teaspoons mixed herbs
mix well and braise for a few minutes. Stir at regular intervals. Now add 1 cup grated cheese and 1 cup of fresh cream & 3/4 cup of milk .
Mix well add boiled pasta, simmer on low heat and serve hot

Masala roast chicken.
1 whole chicken with skin on.
1 tsp ginger and garlic.
2 tsp Amina's chicken tikka marinade.
1 tsp salt.
1/4 tsp tumeric powder.
1 tsp chillie powder.
2 squirts of lemon juice.
Method :
combine spices and marinade and smear chicken all over... Add to pot with 1 cup water and allow to cook on high for until all water has burnt out !! Lastly add a lil oil and let the chicken fry till crispy !! Enjoy! Serve with salad, chips or pasta :)

1 tsp salt.
1/4 tsp tumeric powder.
1 tsp chillie powder.
2 squirts of lemon juice.
Method :
combine spices and marinade and smear chicken all over... Add to pot with 1 cup water and allow to cook on high for until all water has burnt out !! Lastly add a lil oil and let the chicken fry till crispy !! Enjoy! Serve with salad, chips or pasta :)

CHICKEN ROSES

Chicken Roses
Roses
2cups flour
3quarter tspn salt
1nhalf tspn bakin powder
4tblspn ghee
Fridge water to mke dough
Filling
500g chicken mince
Half cup mashed potato
Half cup peas(frozen)
Half cup grated cheese
1tspn green chillies
Salt to taste
Garlic to taste
1tsp whole jeeroo
Cubed cheese
Beaten egg
Grated cheese
Method
sift dry ing, add ghee and add water to mke a dough. Roll out into small rotis. Mix all filling ingredients together except cubed cheese. Put a cube in middle of each ball. Cut four slits on corner of each roti and place ball in centre, fold as for roses. Brush with beaten egg and bake alternately can put each ball on roti and roll again into a ball.

Quick fix doughnuts (no yeast)
Recipe by Saffiyah Motala 25C0FF3B: Quick fix doughnuts (no yeast)
Sift 2gether-
2c flour
1/2t bicarb soda
1/4t salt
1/2t nutmeg or cinnamon pwd
6T yoghurt or maas (sour milk)
Cream 2gether-
1/2c sugar + 2T (30g) butter
Then add in n beat well-
1 egg + 1/4t v.ess
-add sifted flour alternately with yoghurt in2 creamed mixture to form dough.
-roll out dough not 2 thickly as it does puff up nycly, and cut out doughnuts. I used sml scone cutter n a nozzle to take out centres.
-leave to rest 10mins
-fry in deep oil till golden turning over once
-roll in c.sugar or dip in choc.
*u can omit cinnamon from dough, and add to castor sugar when rolling if u want

Pyramid Cheesecake By Asiah
ASIAH: Pyramid cheese cake.
125 g butter.
1/3 cup icing sugar.
1 egg.
1t vanilla essence.
250 ml. Fresh cream.
1 pkt tennis biscuits.
1/2 whole nut chocolate grated.
Method.
Beat butter and sugar well.
Add cheese eggs and essence to butter mixture beat quick.
Beat fresh cream.
Place tennis biscuits.
Twelve flat add butter mix.
Shape into puramid with other biscuits.
Decorate with fresh cream.
Grate choc on top allow to chill enjoy.

PROFITEROLES
Description:OBAIDIYAH'S Profiteroles
Ingredients
1/4 cup water
1/4 cup milk
2T butter
Pinch salt
1/2 cup all-purpose flour
2 eggs
Directions
Preheat oven to 200 degrees
In a small saucepan combine the water,milk, butter and salt and bring to a boil. Reduce the heat and add the flour all at once and stir it vigorously with a wooden spoon. Cook until the mixture has formed a ball and has a slight sheen to it and it has pulled away from the pan. Transfer the mixture to a mixing bowl and let cool for 3 to 4 minutes. The mixture does not have to be cold, just cool enough not to cook the eggs when added. Using an electric mixer or lots of good old-fashioned elbow grease, beat in the eggs 1 at a time. Do not add the second egg until the first is fully incorporated.
Transfer the mixture to a pastry bag equipped with a large straight tip and pipe 1-inch balls onto a sheet tray lined with parchment paper. When done dip your finger in water and smooth the top of each ball where the pastry bag released the dough. Be sure to leave at least 1-inch between each of the balls. They grow! Bake in the preheated oven for 10 minutes then reduce the heat to 180deg C and continue to bake for about 15 more minutes, until they are a rich golden brown colour and are very light. When done, the puffs should be airy and dry inside. Switch oven off and leave it to crisp.cool before filling
When ready to serve, cut in half horizontally and fill with ice cream of your choosing/whipped cream/pastry cream. Top with melted chocolate

Pastry Cream
1 cup milk
1/2 vanilla bean OR 1 1/2 tsp vanilla bean paste
3 large egg yolks
4 tablespoons sugar
2 tablespoons cornstarch
2 tablespoons unsalted butter, cut into pieces
Pastry Cream
Heat the milk with the scraped seeds of the vanilla bean or the vanilla bean paste until just below a simmer.
In a separate bowl, whisk the egg yolks, sugar and cornstarch. Ready a bowl with the butter, placing a strainer on top of it.
Gradually whisk the hot milk into egg mixture and then return it all to the pot. Whisk this constantly (switching to a spatula now and again, to get into the corners) over medium heat until thickened and glossy, about 2 minutes. Pour this immediately through the strainer, whisking it through if needed, and stir in the butter. Place a piece of plastic wrap directly over the surface of the custard, cool to room temperature and then chill completely until ready to use.

MARIE BISCUIT DESSERT
This lovely dessert was made by ASIAH: Marie biscuit dessert
.
125 g butter.
1cup castor sugar.
1 big. Tin nestle cream.
1 packet marie biscuit.
1 egg white.
1 whole nut choc.
Method.
Cream butter and sugar well add nestle cream beat add egg white beat.
Beat 500ml fresh cream.
Layer in casserole starting with butter mix fresh cream and biscuits. Finish of with fresh cream decorate. Add grated chocolate.

CHANA (CHICKPEAS)
Chana (Chickpeas)
Braise 2 sprigs of curry leaves, 1 tsp crushed garlic n 1tsp mustard seeds in ghee or oil
When spluttering stops, add:
1tsp chilli powder (or to taste)
1tsp dhania jeeru powder ( coriander and cumin powder mix)
1tsp salt
Add 2 liquidised tomatoes +1 Tbl lemon juice n cook for awhile
Add 2 tins drained chickpeas + ½ tin coconut cream n cook till done n water is burnt.
Serve garnished with chopped dhania n fresh grated coconut, n roti of course.

beat together 1 egg + 2 Tbl sugar- then add 2 Tbl melted ghee (butter).. Beat well.
Then add:
2 1/2 cups flour ,
1/2 tsp salt,
2 1/2 tsp Baking Powder.
Form soft dough wid warm milk-cover n allow to rest For half hour.
Form 12 balls n roll into saucer sized circles- brush egg n sprinkle tal (sesame seeds) - fry in hot oil til golden (need to work fast wen frying) ..njoy

Coffee Cake
Lovely recipe from a bbm group friend.
Coffee cake:
INGREDIENTS
4 eggs separated
1 cup castor sugar
1tsp v ess
3/4cup oil
1/4 cup boiling water with 2tsp coffee
1 1/4cup flour
4tsp baking pwd ,
*beat egg whites stiff add castor sugar, beat then add egg yolks beat, then oil beat then add sifted flour andn b.pwd, fold in with water mixture
Coffee icing.
60g butter,1tsp coffee diluted in 1tsp hot water, 1tsp honey, 1tsp Vanilla ess, and 1cup icing sugar.

Chop up 1 medium bunch spinach.
Cook with:
1med onion (chop v fine)
Garlic.
salt/pepper/aromat n Green chillis
Cook just untill its dry.
Cool and add in:
flour- 1 cup.
2 eggs,
Half cup oil.
2 tsp baking powder.
Lots of cheese n feta + half tin creamstyle sweetcorn.
mix well- pour into Muffin pans. Bake @ 180 +- 20 mins-must b slightly browned on top-- njoy hot hot...

Strawberry Muffins
This recipe comes from a friend on my bb group.
INGREDIENTS
1 Cup all purpose flour
Half cup Castor sugar
1 and Half tsp baking powder
Pinch of salt
1 Egg, lightly beaten
Half cup milk
Quarter cup butter, melted and cooled
Half tsp vanilla essence
Half to 3Quarter cup strawberries, washed, hulled, coarsely chopped
Method
Preheat oven to 190 degree celcius/ 375 F. Line muffin tin with paper liners. In a large bowl, sift flour and baking powder. Add sugar and salt to flour mixture. In another bowl, combine the egg, milk, butter and vanilla, mix well. Fold the wet ingredients together with the dry ingredients until just combined. Fold the chopped strawberries. Spoon the batter equally into each paper liner. Bake for 15-18 min or until a skewer inserted into the center comes out clean. Stand in the pan for 5 minutes, then transfer to a wire rack to cool. Dust with icing sugar before serving. if desired.

Saj's Nachos
1 packet of doritos flavour of ur choice
1 tomatoe chopped
1 med onion chopped
1 sml green pepper chopped
1 green chilli chopped
A cup of cheese grated
Place half the packet of doritos in an oven proof dish/ bakin tin, sprinkle with half the cheese, empty rest of doritos over cheese sprinkle rest of cheese, extra cheese can b added, mix all veg together season to taste, top over cheese, place in oven until cheese melts,
Remove from oven shred some lettuce an place on top sever with sour cream n guacamole
